Sea Bass in Wine Sauce with Tomatoes and Peppers
Ingredients
- Olive Oil - 2 tablespoons
- Garlic - 3 cloves
- Dry White Wine - ½ cup
- Marinara sauce - 1½ cups
- Fresh basil leaves - ¼ cup
- Orange Bell Peppers - 2 pieces
- Scorpion fish fillet - 8.1 oz
Step by Step guide
Step 1
Preheat the grill or oven. Cut the peppers in half, place them on the grill, and roast until the skin starts to char. Transfer to a bag. Cool and remove the skin. Cut into small pieces.
Step 2
Preheat the oven to 392°F.
Step 3
Heat 1 tablespoon of oil in a pan over medium heat. Add minced garlic and sauté for 1 minute. Pour in the wine and bring to a boil. Then add the marinara sauce, red peppers, and half of the chopped basil. Bring to a boil and cook until the sauce thickens, stirring, about 5 minutes. Season with salt and pepper.
Step 4
In a small baking dish, place the fish, drizzle with the remaining oil, and mix well. Season with salt and pepper. Pour the sauce over and bake until cooked through, about 20 minutes. Sprinkle with the remaining basil and serve.
