Ingredients
- Chilean sea bass fillet - 2 pieces
- Eggplants - 1 piece
- Olive Oil - 3 tablespoons
- Meyer Lemon Juice - 2 tablespoons

Step 1
Make several cuts on the sea bass fillets and sauté them in olive oil.
Step 2
Roast the eggplant whole in the oven (356°F — determine the cooking time by the well-cooked skin, piercing it in several places with a fork beforehand).
Step 3
Cut the eggplant in half and scoop out the insides with a spoon. Finely chop the eggplant, drizzle with olive oil, and season with salt and freshly ground pepper.
Step 4
On a plate, place the eggplant (in the center, like tartare), top with the fish fillet, and squeeze lemon juice over it.
