Ingredients
- Sea Bass - 15.9 oz
- Coarse Salt - 2 lbs
- Fresh Rose Hips - 4 sprigs
- Lemon - 1 piece
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Gut the fish and remove the scales.
Step 3
Pour a layer of salt into a baking dish suitable for fish.
Step 4
Thoroughly dry the fish with a paper towel, place the rosemary sprigs inside. Lay it on the salt.
Step 5
Cover the top with the remaining salt (the salt should completely cover the fish) and lightly sprinkle with water on top to create a salt crust during cooking.
Step 6
Place in the oven for 25 minutes.
Step 7
Remove the fish from the oven, break the crust with a knife, and take out the fish. Remove excess salt.
Step 8
Transfer to a serving plate and carefully remove the skin and bones (if you can). Serve with lemon wedges.
