Description
Sea buckthorn is vibrant and complex on its own, and adding anything to it can be challenging. We found the perfect balance, and now this jelly is one of our favorites. With fresh autumn berries, it couldn't get any better.
Ingredients
- Sea Buckthorn - 10.6 oz
- Rosemary - 3 sprigs
- Sugar - 4.2 oz
- Starch film - 1.4 oz
- Water - 1¼ l
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Bring 1 liter of water with sugar to a boil in a pot.
Step 3
Add the sea buckthorn and rosemary, bring to a boil, and simmer for 5–7 minutes.
Step 4
Remove the rosemary from the compote.
Step 5
Blend the compote with an immersion blender.
Step 6
Strain through a sieve and return to the heat.
Step 7
Mix the remaining water with the cornstarch until smooth.
Step 8
Pour the starch solution into the pot and bring it back to a boil, stirring with a whisk.
Step 9
When the jelly becomes smooth and starts to thicken, remove it from the heat.
Step 10
Serve the sea buckthorn jelly hot or chilled, garnished with a sprig of rosemary if desired.
