Ingredients

  • Paella rice - 14.1 oz
  • Shrimp - 21.2 oz
  • Seafood cocktail - 28.2 oz
  • Garlic - 4 cloves
  • Orange Bell Peppers - 1 piece
  • Green Peas - 1 cup
  • Saffron - 2 teaspoons
  • Olive Oil - 1 fl oz
  • Tomatoes - 2 pieces
  • Passata Tomato Sauce - 1 tablespoon
  • Fish Oil - 2 qt
  • Onion - 1 head
  • Parsley - 1 bunch

Step by Step guide

Step 1

Peel the garlic and chop finely.

Step 2

Clean the shrimp, leaving the tails on, and remove the intestinal vein.

Step 3

Place the shrimp in a bowl and sprinkle with 1 teaspoon of garlic.

Step 4

In another bowl, mix the seafood mix with salt, pepper, and 1 teaspoon of garlic, and stir well.

Step 5

Finely chop the peeled onion and chop the parsley.

Step 6

In a large pot, heat the fish broth and add a pinch of saffron to infuse.

Step 7

For the tomatoes: make a cross-cut on the top of each tomato, dip them in boiling water for 1 minute, then peel and finely chop the flesh.

Step 8

In a large deep skillet, heat the olive oil and sauté the shrimp for 2 minutes.

Step 9

Transfer the cooked shrimp to a separate plate.

Step 10

In the same skillet, sauté the onion with the remaining garlic for 5 minutes.

Step 11

Add the seafood mix and sauté for 1 minute.

Step 12

Then add the finely chopped tomatoes and sauté for another 2–3 minutes, stirring.

Step 13

Add the rinsed rice and saffron to the skillet. Stir.

Step 14

Then add the tomato paste and green peas, mixing well with the rice.

Step 15

Pour in the hot fish broth at a ratio of 1 cup of rice to 3 cups of broth.

Step 16

After adding each portion of broth, stir the rice, simmering on low heat until the liquid is almost completely absorbed.

Step 17

When the broth is nearly absorbed, place the sautéed shrimp and strips of bell pepper on top of the rice.

Step 18

Remove the skillet from the heat and serve the paella immediately.
