Seafood skewers in tequila and lime marinade

Ingredients

  • King Prawns - 8.8 oz
  • Scorpion fish fillet - 8.8 oz
  • Smoked haddock fillet - 8.8 oz
  • Snap Peas - 4.2 oz
  • Pineapple - ½ piece
  • Orange Bell Peppers - 1 piece
  • Orange zest - 1 tablespoon
  • Lime Juice - ¼ cup
  • Tequila - ¼ cup
  • Orange juice concentrate - 3 tablespoons
  • Scallions - 1.1 oz
  • Chopped Green Onions - 1½ teaspoons
  • Salt - ½ teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Lime - to taste

Step by Step guide

Step 1

Peel the shrimp.

Step 2

On skewers, alternately thread the shrimp, diced sea bass fillet, diced salmon fillet, snap peas, pieces of red bell pepper, and pieces of peeled pineapple. Arrange in a single layer in a dish.

Step 3

In a bowl, mix lime zest and juice, tequila, orange juice, chopped green onion, cilantro, salt, and pepper. Pour the marinade over the skewers and let sit for 1 hour, turning occasionally.

Step 4

Preheat the grill or barbecue.

Step 5

Grill the skewers, basting with marinade, for 6-7 minutes on each side until cooked through.

Step 6

Serve immediately with lime wedges.
