- Mirin - 2 tablespoons
- Miso Paste - 0.5 oz
- Freshly squeezed orange juice - 2 fl oz
- Grated Ginger Root - 2 teaspoons
- Freshly squeezed orange juice - 2 tablespoons
- Soy Sauce - 2 teaspoons
- Rice Vinegar for Sushi - 3 tablespoons
- Red Long Chili Peppers - a pinch
- Sesame Oil - ¼ teaspoon
- Shallot - 1 piece
- Toasted Sesame - 3 tablespoons
- Black sesame seeds - 1 tablespoon
- Tuna - 17.6 oz
- Vegetable Oil - 1 tablespoon
Step by Step guide
Step 1
Make the sauce: mix mirin, miso paste, ginger, carrot juice, orange juice, soy sauce, vinegar, red pepper, and sesame oil in a small bowl, whisking until the miso is completely dissolved.
Step 2
Add finely chopped shallot.
Step 3
Prepare the tuna: mix the sesame seeds on a plate. Cut the fillet (preferably sushi or sashimi grade tuna) into rectangular pieces weighing about 125 grams. Coat each piece in the seeds, ensuring each side is covered, and gently press the seeds into the fish.
Step 4
Heat the oil over medium heat and sear the tuna for 30 seconds on each side, until the white seeds turn golden.
Step 5
Transfer the tuna to a paper towel to drain excess oil for 1 minute, then slice each piece into 1 cm thick slices.
Step 6
Serve with the sauce.
