Description
Instead of cream, you can use HOMEMADE YOGURT (tested! I made it with a thick fermented dairy product from a yogurt maker), it will be less fatty, although it tastes better with cream. Adjust the sweet-sour balance with sugar to your taste.
Ingredients
- Adyghe cheese - 10.6 oz
- Cream - 7 fl oz
- Tomatoes - 2 pieces
- Onion - 1 piece
- Ginger - 1 tablespoon
- Cashews - 15 pieces
- Tomato Paste - 2 tablespoons
- Ground chili pepper - ½ teaspoon
- Garam Masala - 1 teaspoon
- Cardamom Pods - 4 pieces
- Salt - to taste
- Garlic - 2 cloves
- Cloves - 3 pieces
- Ground Cumin - ½ teaspoon
- Bay leaf - 1 piece
- Ground coriander - 1½ teaspoons
- Sugar - 1 teaspoon
Step by Step guide
Step 1
Chop the onion, blanch the tomatoes in boiling water, peel them, and cut them into pieces. It is better to blend the tomato sauce with a blender later to achieve a smooth sauce, so the size of the onion and tomato pieces doesn't matter; if you chop them finely, they will almost dissolve.
Step 2
Sauté the onion in a saucepan until it becomes transparent, then add a 2 cm piece of grated ginger and 2 crushed garlic cloves.
Step 3
Add the tomatoes to the onion and simmer everything together.
Step 4
Grind 15 cashews into a paste and add them to the tomatoes. You can skip the cashews, although they add an interesting flavor.
Step 5
Add the spices. If you plan to use a blender, remove the seeds from the cardamom pods and add only the seeds (if not, you can crush the pod by hand and add it whole) and add the bay leaf later. ½ teaspoon of chili will make it a bit spicy; adjust the pepper to your taste.
Step 6
Next, either puree or not, then add the tomato paste and a little sugar to balance the acidity from the paste. Pour in the cream and mix.
Step 7
Cut the Adyghe cheese (or better yet, homemade paneer) into bite-sized cubes and add it to the sauce, cooking for a few more minutes to allow the cheese to absorb all the flavors.
Step 8
Serve with Indian naan bread, another type of bread, or rice.
