- Olive Oil - 2 tablespoons
- Bay leaf - 2 pieces
- Onion - 1 piece
- Garlic - 3 cloves
- Carrot - 2 pieces
- Pickled Chanterelles - 5.3 oz
- Rack of Lamb - 15.9 oz
- Wheat Flour - 2 tablespoons
- Chicken Broth - 2 cups
- Fresh Mint - 1 tablespoon
- Tomato Puree - ½ cup
- Ground Cinnamon - ½ teaspoon
- Potato - 4 pieces
- Butter - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Cheshire Cheese - 3.5 oz
- Cilantro - 1 tablespoon
Step by Step guide
Step 1
For the filling, heat the olive oil with the bay leaf in a pan and sauté the onion until soft. Add the garlic and carrot, cooking for two minutes. Add the ground lamb, brown it, then pour in the hot broth. Cover and simmer on low heat for one hour.
Step 2
Add the mushrooms, herbs, and spices to the pan, continuing to simmer the mixture for five minutes. Stir in the flour and tomato puree, mixing well and cooking for another couple of minutes. Remove the bay leaf. Transfer the meat filling to a baking dish.
Step 3
For the topping, boil the potatoes until tender, mash them with butter and salt. Spread over the meat filling and sprinkle with grated cheese.
Step 4
Preheat the oven to 428°F. Place the pie in the oven for 20 minutes. Cut into portions and transfer to serving plates. Garnish with fresh herbs if desired.
