- Green Cabbage - 1 head
- Sugar - ¼ teaspoon
- Salt - 1 teaspoon
- Ground Black Pepper - ¼ teaspoon
- Onion - ½ head
- Lemon Juice - 2 fl oz
- Vegetable Oil - 2 fl oz
- White Wine Vinegar - 1 tablespoon
- Cherry Tomatoes - 21.2 oz
- Fresh Mint - 1.2 oz
- Pomegranate Seeds - 3.5 oz
Step by Step guide
Step 1
In a large bowl, mix the cabbage with sugar, 1 teaspoon of salt, and ¼ teaspoon of pepper, cover, and let it sit at room temperature for 30 minutes to soften the cabbage (you can also cover it and refrigerate for up to 2 hours).
Step 2
Add the onion, lemon juice, oil, and vinegar to the cabbage and mix everything together. Without covering, let the salad sit at room temperature for 5 minutes to allow the flavors to meld. Then add the tomatoes, cilantro, mint, and pomegranate seeds and mix the salad. Finally, add more salt and pepper to taste.
