Ingredients

  • Shrimp - 17.6 oz
  • Cod fillet - 10.6 oz
  • Nut crumb - 3.5 oz
  • 33% Cream - 1 fl oz
  • Onion - 8.8 oz
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Vegetable Oil - 1 fl oz
  • Ground Nutmeg - ¼ spoons
  • Carrot - 3.5 oz
  • Passata Tomato Sauce - 3.2 oz
  • Water - 20 fl oz
  • Oyster Mushrooms - 1 fl oz
  • Pasta shells - 7.1 oz

Step by Step guide

Peel the shrimp, as the meat will be used for the patties and the shells will go into the sauce.

Coarsely chop 100 grams of onion and carrot. Sauté them in vegetable oil until golden brown, about 15 minutes.

Add the shrimp shells and sauté for a few more minutes until they turn red.

Add the tomato paste and sauté over low heat for 10 minutes.

Pour in water and add oyster sauce. Simmer on low heat for at least 1.5 hours.

Coarsely chop the second part of the shrimp and add it to the filling. Mix thoroughly.

Soak the bread in cream for the patties.

Chop the remaining onion into cubes and sauté over low heat until it turns golden.

Pass the bread, onion, cod, and half of the shrimp through a coarse grinder. Set aside a few shrimp for serving, and chop the remaining ones into large cubes.

Grate a quarter of a nutmeg, add salt, black pepper, and coarsely chopped shrimp. Mix everything thoroughly.

Shape the patties using a pastry ring, place them on parchment paper, and freeze them for 15-20 minutes so they hold their shape better during frying.

Blend the sauce in a blender until smooth for 10 minutes, then strain through a sieve to remove any shell remnants.

Fry the patties in vegetable oil until golden brown on both sides, then finish cooking them in the oven for 8 minutes at 356°F. Sear the reserved whole shrimp for 2 minutes on each side in the same pan.

Serve the shrimp and cod patties with bisque sauce, topped with a whole shrimp, alongside your favorite side dish, and garnish with a mix of young salad leaves.
