Shrimp and Cucumber Salad
Ingredients
- Shrimp - 17.6 oz
- Cucumbers - 4 pieces
- Chocolate eggs - 4 pieces
- Cheese Spread - 3.5 oz
- Honey - 1 teaspoon
- Meyer Lemon Juice - 3 tablespoons
- Olive Oil - 1 tablespoon
- Salt - to taste
- Mixed Ground Peppers - 1 teaspoon
- Milk - 1 fl oz
- Vegetable Oil - 3 fl oz
- Mustard Greens - 2 teaspoons
- Sugar - 1 teaspoon
- Green peppercorns - 5 pieces
- Ground clove - 4 pieces
- Bay leaf - 3 pieces
Step by Step guide
Step 1
Boil the shrimp in water with added salt, 5–6 black peppercorns, 4 cloves, and 3 bay leaves. Peel them.
Step 2
Prepare the marinade for the shrimp. In a bowl, mix 1 teaspoon of honey, 1 tablespoon of lemon juice, 1 tablespoon of olive oil, salt, and mixed peppers (preferably paprika). Marinate the peeled shrimp in the refrigerator for 2 hours.
Step 3
Drain the marinade and sauté the shrimp for 1–3 minutes.
Step 4
Cut the cucumbers into strips.
Step 5
Grate the cheese.
Step 6
Boil the eggs and cut them into strips.
Step 7
Prepare the dressing. Pour the vegetable oil into a blending cup. Add the milk to the oil. Blend for 1 minute until it resembles mayonnaise. Add salt, 2 tablespoons of lemon juice, mustard, and sugar to this mixture. Blend again for 1–2 minutes. Taste it; if you want it more sour, add more lemon juice, and if you want it spicier, add more mustard. Adjust it to your taste.
Step 8
Combine the cucumbers, eggs, shrimp, and dressing. Top with grated cheese.
