Ingredients
- Cilantro - 1.2 oz
- Fresh basil leaves - 1.2 oz
- Parsley - 0.7 oz
- Meyer Lemon Juice - 2 tablespoons
- Water - 2 tablespoons
- Garlic - 1 clove
- Olive Oil - 4 teaspoons
- Peeled Cooked Shrimp - 24 pieces
- Courgette - 1 piece
- Salt - ½ teaspoon
- Ground Black Pepper - ¼ teaspoon
Step by Step guide
Step 1
Preheat the grill or barbecue.
Step 2
In a blender, combine basil, cilantro, parsley, lemon juice, minced garlic, and 2 teaspoons of olive oil. Blend until smooth. Transfer to a bowl and add the shrimp. Mix well and let sit for 15 minutes.

Cut the zucchini into small pieces.
Step 4
Thread the zucchini and shrimp onto skewers, alternating between them. Drizzle with the remaining olive oil. Place on the grill and cook for about 3 minutes on each side until done. Season with salt and pepper and serve.
