Shrimp Ravioli

Ingredients

  • Wheat Flour - 7.1 oz
  • Chocolate eggs - 3 pieces
  • Water - 1 cup
  • Vegetable Oil - 1 tablespoon
  • Shrimp - 17.6 oz
  • Hard Cheese - 4.4 oz
  • Chopped Sage Leaves - 2 tablespoons
  • Farmers cheese - 2.1 oz
  • Basil - 10 tablespoons
  • Chopped Sage Leaves - 1 teaspoon
  • Meyer Lemon Juice - 1 tablespoon
  • Cream 22% - 25 fl oz
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Knead a stiff dough from flour, eggs, vegetable oil, and salt, gradually adding water until the dough is elastic. Cover with a towel and let it rest for 30 minutes.

Step 2

Prepare the filling. Mix finely chopped shrimp, crumbled sheep cheese, lemon juice, and chopped parsley, 4 tablespoons of basil, and thyme, seasoning with salt and pepper.

Step 3

Roll out the dough thinly and cut it into 2 sheets. Place the filling on one sheet, leaving 2–3 cm between each portion. Cover with the second sheet, seal the dough by pressing around the filling, and then cut into squares with a pastry cutter.

Step 4

Prepare the sauce. Reduce the cream by one-third. Add the remaining crumbled cheese and blend with a mixer until smooth. Season with salt and pepper, and add the remaining basil.

Step 5

Boil the ravioli in salted boiling water for 5–7 minutes. Drizzle with sauce and serve.
