- Danish Blue Cheese - 2.1 oz
- Green Butter - 1 bunch
- Ginger - 1 piece
- Fresh Mint - 1 bunch
- Olive Oil - 3 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- King Prawns - 10 pieces
- Grapefruits - 1 piece

Step 1
Prepare the prawns: boil them and peel.
Step 2
Finely chop the ginger, sauté it with the prawns in a small amount of olive oil until golden. Let cool.
Step 3
For the dressing, blend the leaves of a small bunch of mint, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and salt in a blender. The leaves should be finely chopped.
Step 4
Rinse and dry the lettuce, place it on a plate. Drizzle with half of the dressing. Then add the cooled prawns, peeled segments of grapefruit, and diced cheese. Drizzle with the remaining dressing.
