Ingredients
- King Prawns - 17.6 oz
- Shelled pumpkin seeds - 3.5 oz
- Arugula - 7.1 oz
- Canned Baby Beets - 7.1 oz
- Champagne Vinegar - 1 fl oz
- Oranges - 1 piece
- Ground Black Pepper - to taste
- Turmeric - ½ teaspoon
- Sugar - 1 tablespoon
- Salt - to taste
- Vegetable Oil - 1 fl oz
- Mild Chili Spice - 1 piece
Step by Step guide
Step 1
Sauté the shrimp with a sprig of rosemary and walnuts in a mixture of olive and butter. Season with salt and pepper to taste.
Step 2
Boil the large white beans.
Step 3
Mix the beans with the sauce and let them soak.
Step 4
On a plate, lay out the arugula, then the beans, and place the chilled shrimp on the sides. Drizzle everything with the sauce.
Step 5
Place the remaining sauce in a sauceboat alongside.
Step 6
For the sauce: Add garlic and the juice of 1 orange with pulp to a blender and blend.
Step 7
Add turmeric, vinegar, honey, olive oil, and blend again.
Step 8
Remove seeds from the chili pepper, chop it, and add it to the sauce.
