Shrimp skewers
Ingredients
- Tiger shrimp in brine - 17.6 oz
- Ground Cumin - 0.2 oz
- Ground coriander - 0.2 oz
- Turmeric - 0.2 oz
- Garlic - 5 cloves
- Lime Juice - 1 fl oz
- Coconut Milk - 8 fl oz
- Salt - to taste
- Peanut Butter - 4.4 oz
- Soy Sauce - 1 fl oz
- Rice Vinegar for Sushi - 0 fl oz
- Brown Sugar - 1.1 oz
- Sriracha - 1 fl oz
- Grated Ginger Root - 0.5 oz
- Water - 2 fl oz
Step by Step guide
Step 1
Prepare all the ingredients. Soak the skewers in water beforehand to prevent them from burning during grilling.
Step 2
Peel the shrimp, leaving the tails on for presentation. Make a shallow cut along the backs and remove the intestinal tract.
Step 3
Transfer the shrimp to a bowl, add cumin, coriander, turmeric, and 2 cloves of garlic pressed through a garlic press.
Step 4
Pour the shrimp with coconut milk and half of the lime juice. Mix well and let marinate for an hour.
Step 5
For the sauce, mix together peanut butter, soy sauce, sriracha, vinegar, sugar, and the remaining lime juice.
Step 6
Add the remaining garlic pressed through a garlic press and the grated ginger. Mix everything together.
Step 7
Gradually stir in warm water, one spoonful at a time, until you achieve the desired consistency of the sauce.
Step 8
Thread 3 to 4 shrimp onto skewers.
Step 9
Quickly grill the skewers on a preheated barbecue or grill for 3 to 5 minutes on each side, depending on the heat.
Step 10
Serve the skewers with peanut sauce.
