Shrimp with Black Pepper and Caramelized Mango
Ingredients
- Mango - 1 piece
- Peeled Cooked Shrimp - 14.1 oz
- Ground Black Pepper - 4 teaspoons
- Olive Oil - 4 teaspoons
- Ocean salt - to taste
- Vegetable Oil - ¼ cup
- Salt - ¼ teaspoon
- Lemon - 1 piece
- Scallions - 1 piece
Step by Step guide
Step 1
Rinse 10 large shrimp under cold running water, pat dry, and skewer 5 shrimp onto 2 wooden skewers. Generously sprinkle the backs of the shrimp with black pepper and lightly salt.
Step 2
Peel the mango and use a sharp thin knife to cut large pieces of flesh from both sides of the pit.
Step 3
In a heavy-bottomed skillet, heat the vegetable oil over medium heat. When the oil is sizzling, place 2 pieces of mango (flat side down) into it. Fry until browned (about 3 minutes) and immediately transfer to plates.
Step 4
In the same skillet, place the shrimp on the skewers and fry on both sides. Cook for 3-5 minutes depending on the size of the shrimp.
Step 5
Place the cooked shrimp directly on the skewers onto the plates with mango, drizzle with olive oil, and sprinkle with sea salt. Serve with lemon wedges and green onion.
