Ingredients
- Onion - 1 head
- Tomatoes - 17.6 oz
- Shrimp - 26.5 oz
- Garlic - 1 clove
- Olive Oil - 3 tablespoons
- Passata Tomato Sauce - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Wheat Flour - 2 tablespoons
- Capers - 2 tablespoons
- Butter - 1.8 oz
- Parsley - 1 bunch
- Meyer Lemon Juice - to taste
- Courgette - 1 piece
Step by Step guide
Step 1
Peel the shrimp, coat them in flour, and sauté in olive oil.
Step 2
Make a cross-shaped incision on the tomatoes, dip them in boiling water for 20-30 seconds, then cool and remove the skin. Dice the flesh of the tomatoes.
Step 3
Chop the onion and garlic, and sauté in olive oil. Add the tomatoes and simmer for 10-15 minutes. Season with salt and pepper. Add chopped parsley. Remove from heat and stir in the butter until melted.
Step 4
Finely chop the peeled cucumber and capers and mix together.
Step 5
Arrange the shrimp and the cucumber and caper salad on a plate. Drizzle with sauce and sprinkle with lemon juice.
