Shrimp with Mango and Glass Noodles
Ingredients
- Rice Noodles - 4.2 oz
- Peeled Cooked Shrimp - 17.6 oz
- Mango - 17.6 oz
- Leek - 3 pieces
- Fresh basil leaves - ¼ cup
- Habanero Pepper - 1 teaspoon
- Rice Vinegar for Sushi - ⅓ cup
- Sugar - 2 tablespoons
- Salt - 1½ teaspoons
Step by Step guide
Step 1
Soak the noodles in boiling water. After 8 minutes, drain and rinse under cold running water.
Step 2
While the noodles are soaking, mix the shrimp, finely chopped mango, leeks, basil, and chopped jalapeño in a large bowl.
Step 3
In a separate container, mix the vinegar, sugar, and salt. Once the sugar dissolves, pour half of the sauce into the shrimp salad and the other half into the noodles.
Step 4
Serve in bowls or individual salad dishes, placing the shrimp and mango mixture on top of the noodles.
