Shrimp Yakitori with Vegetables, Mushrooms, and Sauce

Ingredients

  • Fish Oil - 2 tablespoons
  • Lime - 3 pieces
  • Oyster Mushrooms - 1 tablespoon
  • Peeled Cooked Shrimp - 18 pieces
  • Courgette - 1 piece
  • Orange Bell Peppers - 1 piece
  • Scallions - 10 stalks
  • Marinated cherries - 6 pieces
  • Fresh Mushrooms - 6 pieces
  • Soba Noodles - 3.9 oz
  • Peanut Sprouts - ¼ cup
  • Garlic - 2 cloves
  • Salt - 1 teaspoon
  • Sugar - 2 teaspoons
  • Vegetable Oil - 2 tablespoons

Step by Step guide

Step 1

Juice the limes. Mix the fish sauce with the sugar. Place over low heat and warm until completely dissolved. Cool.

Step 2

Soak 6 wooden skewers in cold water for 2 hours. Thread 3 shrimp, a piece of zucchini, 2 pieces of bell pepper, 2 green onions, 1 mushroom, and 1 tomato onto each skewer. Brush with the prepared sauce.

Step 3

Preheat a grill pan and grill the skewers for 3-4 minutes, turning constantly, until the shrimp are cooked.

Step 4

Cook the noodles in boiling water for 2-3 minutes until tender. Drain and rinse under cold water. Transfer to a bowl and mix with the remaining green onion, bean sprouts, garlic, salt, and sugar. Heat a wok or large skillet and add the vegetable oil. Add the noodles and stir-fry for 2 minutes until heated through.

Step 5

Divide onto 2 plates, top with the skewers. Drizzle with sauce.
