- Wheat Flour - 23.3 oz
- Water - 13 fl oz
- Chicken Egg - 1 piece
- Beef - 14.1 oz
- Pork Blood - 16.2 oz
- Onion - 1 head
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the filling. Cut the beef and pork into pieces and pass them through a meat grinder. Add salt, pepper, a little water, and the onion that has also been ground, then mix everything together.
Step 2
Pour the sifted flour onto a clean surface and create a well in the center. Pour in 330 grams of water mixed with an egg and 12 grams of salt, then knead into a firm, homogeneous dough. Let it rest for 20-30 minutes to allow the gluten to relax.
Step 3
Roll the dough into a log, cut it into pieces, and roll out the small rounds. Place the filling on the rounds, shape them into dumplings, and boil them in salted water for 8–10 minutes.
Step 4
Serve butter, sour cream, and vinegar with the dumplings.
