Ingredients
- Oranges - 4 pieces
- Sweet Red Onion - ½ head
- Olive Oil - 4 tablespoons
- Olives stuffed with lemon - 12 pieces
- Salt - a pinch
- Ground Black Pepper - a pinch
- Pistachios - to taste
Step by Step guide
Step 1
Slice the onion.
Step 2
Place it in a bowl and cover with cold water for 10 minutes to soften the flavor.
Step 3
Peel the oranges, removing all the white part under the skin. Cut them into slices of 0.5-1 cm.

In a separate bowl, mix the olive oil with salt and pepper.

Arrange the oranges on a plate, top with the onion and olives. Drizzle with olive oil and, for a more original flavor, sprinkle with pine nuts.

The dish can be served as an appetizer or as a side dish to rich meals. If using a more acidic orange, the dish will pair especially well with fatty pork dishes.
