Ingredients
- Skate Wings - 1½ kg
- Butter - 5.3 oz
- Capers - 2 tablespoons
- Onion - 1 head
- Champagne Vinegar - 5 tablespoons
- Bay leaf - 2 pieces
- Green peppercorns - 10 pieces
- Salt - to taste
Step by Step guide
Step 1
Place the skate, sliced onion, bay leaves, black pepper, and vinegar in a pot, season with salt, and cover completely with water. Bring the water to a boil, then reduce the heat and simmer gently without boiling for 15 minutes.
Step 2
Remove the skate wings from the broth using a wide knife and peel off the skin (if not done beforehand). Pat the fish dry and transfer to a warmed serving dish.
Step 3
In a skillet, melt the butter. Once the butter turns brown and begins to emit a nutty aroma, remove the skillet from the heat and add the capers along with their brine.
Step 4
Now return the skillet to the heat and warm the sauce, then drizzle it over the fish and serve immediately.
