Description
Skate fish is considered a delicacy. It has white, tender meat and cartilaginous bones. Typically, the fins or 'wings' of the skate are eaten. The delicate fillet, grilled to perfection, pairs wonderfully with hollandaise sauce and stewed vegetables.

- Skate Fillet - 4.2 oz
- Chinese green beans - 2.5 oz
- Marinated cherries - 4 pieces
- Onion - 1 head
- Soy Sauce - 1 tablespoon
- Whole egg - 4 pieces
- Balsamic Vinegar - 1 tablespoon
- Butter - 3.5 oz
- Wheat Flour - 1.1 oz
- Saffron - a pinch
- Breadcrumbs - 1.1 oz
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Prepare the onion confit, or simply onion jam. It's best to make it in advance. Slice the onion into half-rings, place it in a thick-bottomed saucepan, pour in the soy sauce and balsamic vinegar, add a bit of sugar, and simmer on low heat until the mixture thickens.
Step 2
Wash the skate fillet, pat it dry with a paper towel, season with salt and pepper, and bread it: dip the fillet first in flour, then in beaten egg white, and finally in breadcrumbs. Then, fry it in a pan.
Step 3
Next, prepare the hollandaise sauce. For this, mix the egg yolks with butter, add saffron (which can be replaced with curry), salt, and pepper, and carefully heat it over a water bath, stirring constantly until it reaches the desired consistency.
Step 4
Now, let's prepare the stewed vegetables. Sauté the green beans and halved cherry tomatoes in olive oil for a few minutes, adding spices to taste.

Finally, arrange all the ingredients on a plate. Carefully place the onion confit in the center, add the vegetables on top, lay the skate fillet over it, drizzle with hollandaise sauce, and garnish with thyme sprigs.
