Ingredients
- Bone-in Beef - 17.6 oz
- Turnips - 4 pieces
- Celery salt - 7 stalks
- Leek - 2 pieces
- Olive Oil - 2 fl oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Thyme - 1 bunch
- Rosemary - 2 sprigs
- Fresh Bay Leaf - 3 pieces
- Dark Ale - 7 fl oz
- Water - 8 fl oz
- Baking Tomatoes - 10.6 oz
Step by Step guide
Step 1
Drizzle the bone-in beef with olive oil, season with salt and a little pepper, and place in the oven for 20 minutes at 428°F.
Step 2
Meanwhile, chop the carrots, celery, and leeks, and sauté them in a deep pot with olive oil; season with salt and pepper, add thyme, rosemary, and bay leaves, and cover for about 5 minutes.
Step 3
Then pour in the beer, add the tomatoes, and mix everything together.
Step 4
Remove the meat, add it to the other ingredients along with all the juices. Cover and let it simmer on low heat for 4–5 hours.
Step 5
Separate the meat from the bones.
