Description
This is a versatile recipe; you can choose any fish instead of smelt, cut into small pieces.
Ingredients
- Smelt - 17.6 oz
- 10% cream - 4 fl oz
- Dry White Wine - 3 fl oz
- Onion - 1 head
- Butter - 0.7 oz
- Parsley - 2 sprigs
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse and then gut the smelt if it is large.
Step 2
Finely chop the onion and sauté it in a pan with butter until translucent.
Step 3
Add the smelt to the onion and fry it for about a minute on each side.
Step 4
Pour the wine into the pan, bring it to a boil, and simmer the fish for another 30 seconds.
Step 5
Separately heat the cream to about 122°F.
Step 6
Mix the warm cream with salt and pepper and add it to the smelt.
Step 7
Simmer on low heat for about 5 minutes or a little longer if the fish is large.
Step 8
Sprinkle the finished dish with finely chopped parsley and serve.
