  • Eggplant - 2.1 oz
  • Ketchup - 0.2 oz
  • Hoisin Sauce - 0 fl oz
  • Sriracha - 0 fl oz
  • Arugula - 0.4 oz
  • Balsamic Vinegar - 1 fl oz
  • Cherry Tomatoes - 1.8 oz

Step by Step guide

Step 1

Soak the eggplant in salted water for a short time. Cut the eggplant into sticks, then coat them in starch and deep-fry in sunflower oil until crispy.

Step 2

To prepare the sauce, mix the ketchup with hoisin sauce and sriracha. Arrange the arugula in a circle on the plate, place the smoked beetroot in the center, and top with the eggplant.

Step 3

Drizzle with reduced balsamic vinegar and add the chopped cherry tomatoes. Garnish with pine nuts.
