- Balsamic Vinegar - 1 fl oz
- Cherry Tomatoes - 1.8 oz

Step 1
Soak the eggplant in salted water for a short time. Cut the eggplant into sticks, then coat them in starch and deep-fry in sunflower oil until crispy.
Step 2
To prepare the sauce, mix the ketchup with hoisin sauce and sriracha. Arrange the arugula in a circle on the plate, place the smoked beetroot in the center, and top with the eggplant.
