Ingredients
- Ground coriander - 1 bunch
- Chicken fillet - 5.3 oz
- Garlic - 2 cloves
- Corn Salad - 1.4 oz
- Baku Tomatoes - 0.7 oz
- Walnuts - 1.8 oz
- Sour Cream - 7.1 oz
- Milk - 1 fl oz
- Olive Oil - 2 fl oz
- Rosemary - 2 stalks
- Thyme - 0.1 oz
- Natural Alder Smoke Concentrate - 0 fl oz
- Flaky sea salt - 0.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the tomatoes, season with pepper, sprinkle with sea salt, drizzle with 40 ml of olive oil, and sprinkle with thyme. Place in a preheated oven at 356°F for five minutes, then move to a cool, well-ventilated place for three hours.
Step 2
Pack rosemary, a crushed garlic clove, alder smoke concentrate for flavor, and 40 ml of olive oil into a vacuum bag. Mix everything well, add a little salt, and place the chicken breast in the bag. Seal the edges of the bag and cook in the oven on convection mode at 212°F for half an hour. Remove the smoked chicken from the bag and slice it into thin pieces.
Step 3
Place the sour cream, nuts, a clove of garlic, and cilantro leaves (set aside a few sprigs for garnish) into the blender bowl and blend until smooth. If the sauce is too thick, add some milk — the consistency should be similar to that of drinking yogurt.
Step 4
Mix the leaves of the coriander with the sun-dried tomatoes and place them in the center of the plate, arranging slices of chicken on top. Drizzle with satsivi sauce and sprinkle with cilantro leaves.
