Smoked mackerel on the grill
Ingredients
- Mackerel - 4 pieces
- Vegetable Oil - 1 tablespoon
- Ocean salt - 1.8 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Prepare all the ingredients. Light the charcoal.
Step 2
If the mackerel is not gutted, gut it and rinse it under running water.
Step 3
Rub the fish with salt and let it sit for 1 hour. Rinse the mackerel under running water and pat it dry with paper towels.
Step 4
Tear off a sheet of foil and fold it in half.
Step 5
Soak about 100 grams of wood chips or spray them with water. Place them on a piece of foil.
Step 6
Place a second sheet of double-layer aluminum foil on the wood chips and brush it with vegetable oil.
Step 7
Place the mackerel on the foil. Make holes in the foil around the fish.
Step 8
Place another sheet of foil on top and tightly fold the edges to prevent smoke from escaping. Leave some air above the fish to allow space for the smoke.
Step 9
Place the fish packet directly on the coals for 2 minutes (this helps the wood chips start to smolder), then transfer it to the grill. Smoke for 15 minutes.
Step 10
Make a small opening at the top of the foil. If the mackerel is cooked, the fibers will easily separate when pressed. If it's not ready, let it cook for another 5–7 minutes.
Step 11
Serve the smoked mackerel with a wedge of lemon, either hot or cold.
