Ingredients
- Smoked pork knuckle - 3 pieces
- Onion - 1 head
- White Cabbage - 10.6 oz
- Carrot - 1 piece
- Dark Ale - 7 fl oz
- Ground Caraway - 0.2 oz
- Thyme - 0.2 oz
- Ground coriander - ½ teaspoon
- Bay leaf - 1 piece
- Vegetable Oil - 1 fl oz
Step by Step guide
Step 1
Shred the cabbage into strips 3–5 mm wide, grate the peeled carrot on a coarse grater, and slice the onion into thin half-rings.
Step 2
Heat a skillet or saucepan with oil, add the onion, stir, and then add the carrot. Sauté over medium heat for 5 minutes. Then add the shredded cabbage, stir, and cook over medium heat for 10 minutes.
Step 3
Place the smoked ribs on top of the cabbage, pour the beer over them, cover with a lid, and simmer on low heat for 15 minutes.
Step 4
Remove the ribs and separate the meat from the bones. Return the meat to the skillet.
Step 5
In a mortar, crush the caraway seeds, coriander, and thyme. Sprinkle over the cabbage with the meat, stir, add the bay leaf, and simmer covered for 5 minutes.
