Ingredients
- Pork Skewers - 2 lbs
- Honey - 1.8 oz
- Soy Sauce - 1 fl oz
- Sugar - 0.7 oz
- Vegetable Oil - 1 fl oz
- Assam Tea - 0.4 oz
- Rosemary - 4 stalks
- Onion - 17.6 oz
- Cider - 1 fl oz
- Butter - 1.8 oz
- White Balsamic Cream - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Marinate the pork ribs in a mixture of soy sauce, honey, vegetable oil, a pinch of salt, and pepper for thirty minutes.
Step 2
Line the bottom of a deep skillet with foil, then spread the tea on the foil and place rosemary sprigs on top. Place a rack over this and arrange the pork ribs on the rack. Set it on the heat, cover with a lid, and smoke for an hour and a half.
Step 3
Slice the onion into half-rings, transfer to another saucepan, add vinegar, butter, salt, pepper, and sugar. Simmer until all the liquid has evaporated. Serve with ribs and balsamic vinegar.
