- Olive Oil - 5 tablespoons
- Onion - 1 piece
- Bacon - 3.5 oz
- Frozen green bean pods - 4 lbs
- Wheat Flour - 2 tablespoons
- Whole egg - 2 pieces
- Chicken Broth - 1 qt
- Salt - to taste
Step by Step guide
Step 1
Heat the oil in a pan, add finely chopped onion and sauté over low heat for 5 minutes until it becomes soft and translucent. Add diced bacon and cook, stirring, for another 5 minutes.
Step 2
Meanwhile, trim the tough ends off the peas and add them to the pan, increase the heat to high, and cook, shaking the pan, for 10 minutes. Season with salt and stir in the flour. Cook, stirring, for another 2 minutes, then pour in the broth, bring to a boil, reduce the heat, cover, and let it simmer for 30 minutes.
Step 3
Lightly beat the yolks and stir in a bit of the sauce from the pan with the peas. Then pour the egg mixture into the peas, mix, and serve immediately.
