- Soba Noodles - 7.1 oz
- Soy Sauce - 1 tablespoon
- Sugar - 1 tablespoon
- Sherry - 3 fl oz
- Butter - 0.4 oz
- Parmesan Cheese - 1.4 oz
- Salt - to taste
- Vegetable Oil - 0 fl oz
- Ground Black Pepper - to taste
- Herbs - to taste
Step by Step guide
Step 1
In a saucepan, pour in sweet sherry and soy sauce, then add a spoonful of sugar. Place it over high heat to evaporate. Once it has reduced by about a third (this happens quickly over serious heat), the sauce will start to thicken. At that point, remove it from the heat, whisk in a piece of cold butter, and set it aside.
Step 2
Meanwhile, add soba noodles to boiling salted water and cook for five minutes. Then, drain in a colander, rinse with cold water, transfer to a bowl, and toss with vegetable oil to prevent the noodles from sticking together.
Step 3
Arrange on a plate, drizzle with sauce, and sprinkle with grated Parmesan and herbs—cilantro, green onions, basil, or all of them together.
