Ingredients
- Soba Noodles - 2.8 oz
- Peanut Sprouts - 2.8 oz
- Wakame Seaweed - 1 tablespoon
- Hiziki Seaweed - 0.2 oz
- Peanut Butter - 3½ tablespoons
- Soy Sauce - 4 tablespoons
- Watercress - 2.5 oz
- Scallions - ½ piece
- Salt - to taste
- Lime Juice - 3 tablespoons
Step by Step guide
Step 1
Place the soybean sprouts in cold salted water for 10 minutes, drain in a colander, and dry with a paper towel.
Step 2
Soak the wakame in cold water for 5 minutes, drain, and chop the seaweed. Soak the hijiki for 15 minutes, then drain. Heat the oil in a skillet, add the hijiki, and stir. Cook for 1 minute.
Step 3
To prepare the dressing: in a jar with a screw-top lid, combine 3 tablespoons of soy sauce and peanut oil, add lime juice, and shake well.
Step 4
In boiling salted water, cook the noodles for 3 minutes. Drain the noodles in a colander and rinse under cold water. Shake off excess liquid.
Step 5
Thoroughly mix all the salad ingredients in a large bowl (noodles, soybean sprouts, seaweed, 1 teaspoon of peanut oil, watercress, 2 green onion stalks, salt, dressing). The dressing should be evenly distributed. Serve with soy sauce (1 tablespoon).
