Description

Instead of leeks, you can use regular onions, but the taste of regular onions will be more pronounced. The most important thing in preparing this dish is to finish each stage on time: the vegetables should be tender but still firm, the noodles should not be overcooked, and there should be just enough soy sauce so that the dish is not overly salty. You can use pre-cooked white turkey meat instead of raw meat.

Ingredients

  • Soba Noodles - 8.8 oz
  • Chicken fillet - 10.6 oz
  • Sweet Pepper - 1 piece
  • Carrot - 1 piece
  • Leek - 1 head
  • Cucumbers - 1 piece
  • Safflower Oil - 3 spoons
  • Cilantro - a pinch
  • Soy Sauce - 2 spoons

Step by Step guide

Step 1

Bring water to a boil for the noodles.

Step 2

While the water is boiling, cut the turkey fillet into slices that are 5–6 cm long and 1–1.5 cm wide. It is preferable to slice along the grain.

Step 3

Cut all the vegetables into long strips (7-8 cm) and thin slices (2-3 mm). It is advisable to use a sharp knife for this.

Step 4

In a deep skillet (you can use a wok), heat the oil and sauté the ingredients in the following order over medium heat: first the onion, then the turkey meat (making sure to brown it well on each side), next add the carrots, followed by the bell peppers, and then the cucumbers. Sauté each vegetable for 1-2 minutes. It is important not to let the vegetables become too soft and mushy; it’s better if they remain slightly firm (but just slightly) in the finished dish — the key is to catch the right moment.

Step 5

Add salt, pepper, and coriander to taste, stir well, and remove the skillet from the heat.

Step 6

In boiling water, add the vermicelli and cook until almost done (it's better to undercook slightly than to overcook) — about 3 minutes (this depends on the brand; I prefer Japanese). Once the noodles are ready, remove them from the pot and immediately add them to the pan with the vegetables (do not rinse).

Step 7

Sauté everything over medium heat for about 2 minutes, stirring constantly. Season with soy sauce, but be careful not to add too much, as it can easily become too salty. You can offer additional soy sauce on the side for those who want more after the dish is finished. Mix everything thoroughly and remove the pan from the heat.
