Solanka with Pumpkin
Ingredients
- White Cabbage - 5.3 oz
- Pumpkin - 4.6 oz
- Courgette - 4.4 oz
- Olive Oil - 1 tablespoon
- Flaky sea salt - a pinch
- Leek - 1.4 oz
- Ocean salt - to taste
- Sour Cream - 3 tablespoons
- Passata Tomato Sauce - 2 tablespoons
- Worcestershire Sauce - 1 teaspoon
- Pumpkin seed oil - to taste
Step by Step guide
Step 1
Chop the cabbage.
Step 2
Grate the pumpkin on a coarse grater.
Step 3
Grate the zucchini on a coarse grater and combine the ingredients.
Step 4
Heat the olive oil in a skillet. Add a pinch of coarse sea salt.
Step 5
Cut the leek into strips.
Step 6
Add the vegetables to the oil.
Step 7
After 5 minutes, season with salt, stir, and reduce the heat.
Step 8
In a deep bowl, add the sour cream.

Add the tomato paste.
Step 10
Add the Worcestershire sauce.

Mix thoroughly.

Simmer the solanka over medium heat for 10–15 minutes, stirring occasionally. Then add the sauce and remove from heat.

Stir, garnish with pumpkin seeds, and serve.
