Ingredients
- Sole - 3 pieces
- Butter - 1.9 oz
- Fresh Mushrooms - 5.3 oz
- Lemon - 1 piece
- Wheat Flour - 1 tablespoon
- Cotton Oil - 2 tablespoons
- Irish Whiskey - 3 tablespoons
- Whole egg - 2 pieces
- 33% Cream - 7 fl oz
- Red Curry Powder - a pinch
- Gruyère cheese - 0.9 oz
- Salt - to taste
- Bay leaf - 1 piece
- Onion - ¼ head
- Dry White Wine - 6 fl oz
- Carrot - 1 piece
Step by Step guide
Step 1
Prepare the broth: place the bay leaf, a quarter of finely chopped onion, sliced carrot, and salt in a pot, pour in two liters of water, add the wine, whiskey, and juice of half a lemon, and bring to a boil. Then reduce the heat and simmer without boiling for another 10 minutes, after which remove the pot from the heat and let it cool.
Step 2
Remove the rack from the fish pot, pour in half of the broth, and let it cool.
Step 3
Place the fish trimmings in a pot, pour in the remaining broth, and bring to a boil. Now reduce the heat and continue to simmer for another 35 minutes. Remove from heat and strain the trimmings, pouring the resulting stock into a bowl.
Step 4
Place the sole fillets on the rack and set it in the pot. Bring the broth to a boil and then remove from heat. Take out the rack and place it diagonally on top of the pot to let excess liquid drain.
Step 5
Grease the inside of a baking dish with butter, lay the fillets on the bottom, and cover with a towel soaked in hot water or foil to keep warm.
Step 6
In a pot, combine the mushrooms, 20 grams of butter, juice of half a lemon, and a pinch of salt. Place over low heat and cook for 6 minutes, then set aside.
Step 7
Preheat the oven to 392°F. In a pot, melt 30 grams of butter along with olive oil, stir in the flour, and cook, stirring constantly, for 2 minutes.
Step 8
Gradually, in small portions, add 450 ml of the stock from the fish trimmings. Cook, stirring constantly, for 5 minutes, then pour in the whiskey and continue to cook, stirring, for another 3-4 minutes until thickened.
Step 9
Add the mushrooms along with the liquid that formed during cooking. Remove the pot from heat.
Step 10
In a bowl, mix the yolks with the cream and stir into the sauce, then add the curry powder and lightly season with salt. Drizzle the sauce over the fish, sprinkle with grated cheese, and bake for about 15 minutes until golden brown. Serve immediately upon readiness.
