Ingredients
- Sole fillets - 2 pieces
- Lemon - 1 piece
- Mint - 1 teaspoon
- Parsley - 1 bunch
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Chop the herbs; you can use a blender, but if you enjoy the process, chop them with a knife.
Step 2
Mix the juice of half a lemon with pepper and oil.
Step 3
Cut the fillet into medium pieces. Using a brush, coat the fish with oil. Then simply roll it in the herbs.
Step 4
Line a baking sheet with foil and place the fish on it. You can add a sprig of mint or parsley and a couple of lemon slices with the fish. Cover the fish with foil and place it in the oven at a temperature of 190–392°F for 20 minutes. If desired, you can uncover the foil and keep the fish in the oven for a little longer.
