Sorrel with croutons

Ingredients

  • Sorrel - 4 lbs
  • Olive Oil - 1 fl oz
  • White bread - 3.5 oz
  • Chicken Broth - 8 fl oz
  • Salt - to taste
  • Champagne Vinegar - 1 tablespoon

Step by Step guide

Step 1

Rinse the sorrel leaves, chop them finely, place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for five minutes. Drain the water.

Step 2

Heat olive oil in a skillet, add the cubed bread (make sure to remove the crusts beforehand), and fry until golden brown. Remove from the skillet.

Step 3

Transfer the sorrel to a large skillet, pour in the broth, and cook, stirring, for five minutes. Stir in the croutons and vinegar — simmer for a few more minutes and serve.
