  • Orange zest - 1.1 oz
  • Clove - a pinch
  • Apple - 1 piece
  • Turmeric - a knife tip
  • Sugar - to taste
  • Kohlrabi - 1 piece
  • Leek - 1 stalk
  • Milk - to taste

Step by Step guide

Step 1

Marinate the duck breast in a mixture of spices: salt, pepper, orange zest, and clove.

Step 2

After 1 hour, wrap the breast in a vacuum bag and place it in an oven preheated to 135°F for 1 hour.

Step 3

Pickle the apples in orange juice. Add turmeric, salt, and sugar.
