Sous vide pork roll with parsley

Ingredients

  • Dried parsnip - 2 spoons
  • Ground Dried Garlic - 1 tablespoon
  • Dried Chamomile - 1 tablespoon
  • Ground Black Pepper - ½ spoons
  • Pork tenderloin - 17.6 oz
  • Oranges - 1 piece
  • Prosciutto - 3.5 oz
  • Ocean salt - 3.5 oz
  • Vegetable Oil - 0 fl oz
  • Parsley - 2.1 oz
  • Thyme - 5 sprigs
  • Spanish onions - 2.5 oz
  • Garlic - 2 cloves
  • Olive Oil - 6 fl oz
  • Red Wine Vinegar - 2 fl oz
  • Chili Flakes - 1 tablespoon
  • Salt - to taste

Prepare all the ingredients.

Trim the pork tenderloin of any membranes. Dissolve 140 grams of sea salt in 2 liters of cold water and let the pork soak for 2 hours.

Rinse the pork under running water, pat it dry, and cut it into long strips of varying thickness.

Place the dried parsley, dried garlic, thyme, and black pepper into a small blender cup or coffee grinder and blend until it reaches a powdery consistency.

Grate the zest from the orange using a fine grater and rub it onto the pork. Then, coat the pork in the spice mixture until the pieces are fully covered.

Lay two layers of plastic wrap on the table and arrange the slices of prosciutto on top.

Place the pieces of tenderloin perpendicular to the prosciutto and wrap them in the prosciutto using plastic wrap.

Wrap the roll in the same plastic wrap and shape it tightly like a sausage.

Seal the pork in a vacuum bag and cook sous-vide for at least 2.5 hours at 140°F.

For the sauce, remove the leaves from the thyme and parsley sprigs. Roughly chop the parsley leaves.

Peel the orange and dice it into small cubes. Dice the onion into the same size cubes.

Combine the orange with the onion and herbs, then add olive oil, vinegar, chili flakes, crushed garlic, and salt.

Remove the cooked pork from the vacuum bag and film. Sear it in vegetable oil on all sides until golden brown.
