Description
The recipe for Olivier salad was first published in a magazine in 1894. That version included ingredients such as partridges and capers. In later versions (from 1913 and 1984), lettuce and a spicy sauce made from meat broth, vinegar, and various vegetables and roots appeared. However, the diet of citizens in the Soviet Union did not include such expensive and rare ingredients, so over time, partridges were replaced by bologna, capers by pickles, and the spicy sauce by a mayonnaise dressing. This is how the basic recipe for Soviet-style Olivier salad was created, which we all use as a foundation for our own versions.
