- Garlic - 4 cloves
- Olive Oil - 1 fl oz
- Spaghetti - 12.3 oz
- Tomatoes - 5 pieces
- Salt - to taste
- Basil - 4 sprigs
- Parmesan Cheese - 2.1 oz
Step by Step guide
Step 1
Blanch the tomatoes in boiling water for a minute, then transfer them to a bowl of cold water.
Step 2
In a skillet, heat the olive oil and sauté the finely chopped onion until translucent. Add the minced garlic, and after a minute, add the pepper.
Step 3
Puree the tomatoes or pass them through a meat grinder. Pour into the skillet. Simmer for about 20 minutes, then add whole basil leaves and season with salt.
Step 4
Cook the spaghetti until al dente, transfer to the tomato sauce, and add ½ cup of the pasta cooking water. It is important not to overcook the spaghetti.
Step 5
When serving, sprinkle with cheese and drizzle with good olive oil.
