Ingredients
- Olive Oil - 2 fl oz
- Garlic - 4 cloves
- Tomatoes - 28.2 oz
- Pitted olives - 2.5 oz
- Anchovies - 3 pieces
- Capers - 1½ tablespoons
- Oregano - 1 teaspoon
- Red Long Chili Peppers - ½ teaspoon
- Spaghetti - 12 oz
- Chopped Sage Leaves - 2 tablespoons
- Grated Pecorino Pepato Cheese - 1 tablespoon
Step by Step guide
Step 1
In a skillet, sauté the garlic in olive oil for about a minute.
Step 2
Then add the tomato puree (peeled tomatoes blended until smooth), olives, anchovies, capers, oregano, and season with pepper.
Step 3
Cook over medium heat until thickened, stirring occasionally (about 8 minutes).
Step 4
Season with salt and pepper.
Step 5
Meanwhile, cook the pasta according to the package instructions. Drain and return to the pot.
Step 6
Add the sauce to the pasta and mix thoroughly, then add the chopped parsley.
Step 7
Cook on low heat until the sauce coats the pasta (about 3 minutes).
Step 8
Serve with grated Parmesan.
