Spaghetti alle Vongole
Ingredients
- Clams (Vongole) - 40 pieces
- Spaghetti - 8.8 oz
- Parsley - 1 bunch
- Mild Chili Spice - 1 piece
- Garlic - 2 heads
- Olive Oil - 3 tablespoons
- Marinated cherries - 10 pieces
- Dry White Wine - to taste
Step by Step guide
Step 1
Place the clams in a bowl of cold water for 10–15 minutes. This is necessary for the clams to release sand.
Step 2
Cut the cherry tomatoes in half, place them in a separate bowl, and drizzle with olive oil.
Step 3
Bring unsalted or lightly salted water to a boil and cook the spaghetti until al dente.
Step 4
In a pan, sauté garlic and chili pepper in olive oil. I prefer to crush the garlic for more aroma, and cut the chili in half after removing the seeds. After sautéing, remove the garlic and chili from the pan!
Step 5
IMPORTANT! Before starting to cook the clams, I cool the oil in the pan a bit; otherwise, when the water from the clams hits the hot oil, you risk getting burned and making a mess in the kitchen!!!
Step 6
Add the clams to the oil where the garlic and chili were sautéed, stir, and cook over medium heat until the clams open. Discard any closed clams!
Step 7
Add the cherry tomatoes along with the oil they were resting in the bowl to the clams, and also add the sautéed garlic.
Step 8
If the cherry tomatoes are not very good, white wine can improve the situation. If the cherry tomatoes are fragrant and juicy, you can skip the wine.
Step 9
If you do need to add wine, pour it into the clams and simmer on low heat for 5 minutes to allow it to evaporate. Sprinkle with finely chopped parsley and stir.
Step 10
To ensure the pasta is not dry, does not absorb too much sauce, and remains al dente, I place the finished clams and tomatoes in serving plates and generously drizzle them with sauce, leaving some sauce in the pan. I then transfer the cooked pasta to the pan and mix it with the remaining oil.
Step 11
Serve the cooked pasta with clams and cherry tomatoes, mix, and enjoy :)
