- Spaghetti - 8.8 oz
- Garlic - 4 cloves
- Cream 22% - 7 fl oz
- Whole egg - 4 pieces
- Dorbly Cheese - 1.1 oz
- Vegetable Oil - 1 tablespoon
- Grated Pecorino Pepato Cheese - 1.1 oz
- Salt - to taste
- Basil - 1½ spoons
Step by Step guide
Step 1
Bring a pot of water to a boil for the spaghetti, adding basil, salt, and a little sunflower oil to prevent the spaghetti from sticking together.
Step 2
Heat a skillet with a teaspoon of vegetable oil and sauté the crushed garlic over low heat, being careful not to let it turn golden.
Step 3
In a separate bowl, whisk the egg yolks with the cream, then add half of the grated Parmesan cheese and the sautéed garlic, mixing everything thoroughly.
Step 4
Grate the blue cheese on a coarse grater, or simply crumble it.
Step 5
Drain the spaghetti in a colander, plate it, drizzle with the creamy sauce, and sprinkle with blue cheese and the remaining Parmesan.
