Spaghetti in Cream Sauce with Seafood
Ingredients
- Durum wheat - 8.8 oz
- Octopus - 2 pieces
- King Prawns - 8 pieces
- Egg white - 4 pieces
- Water - 5 tablespoons
- Butter - 1.8 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- 10% cream - 5 fl oz
- Onion - 1 head
- Garlic - 2 cloves
- Red Caviar - 2 tablespoons
Step by Step guide
Step 1
Cook the pasta until al dente.
Step 2
While the pasta is cooking, sauté finely chopped onion and garlic in butter until golden.
Step 3
In a deep bowl, whisk the egg yolks, add water, place over a double boiler, and stir constantly. Add cream, butter, grated Parmesan, and the sautéed onion and garlic, season with salt and pepper, and continuously mix the mixture. Remove from the double boiler, cover with a plate or wrap in foil to prevent the top layer from drying out.
Step 4
Rinse the octopuses, remove the eyes and beak, and gut them. Place in boiling water, cook for 10 minutes, and salt at the very end. Peel the prawns, remove the intestines, season with salt and pepper, and sauté for a couple of minutes in olive oil.
Step 5
Drain the pasta, then transfer it to a deep dish and pour our cream and egg sauce over it.
Step 6
Serve the pasta on a plate, top with a spoonful of red caviar, add the octopuses, prawns, and sprinkle with Parmesan and freshly ground pepper.
