Ingredients
- Arugula - 7.1 oz
- Garlic - 1 clove
- Olive Oil - 5 fl oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- King Prawns - 17.6 oz
- Spaghetti - 17.6 oz
- Parsley - 10 bunches
- Citrus Zest Mix - to taste
Step by Step guide
Step 1
Combine arugula and garlic in a food processor. While blending, gradually add 120 ml of olive oil. Blend thoroughly. Transfer the pesto to a large bowl and add the Parmesan. Season with salt and pepper to taste.
Step 2
Clean the prawns. Heat a skillet over high heat. Make a cut along the backs of the prawn tails. Drizzle the prawns with oil and sprinkle with salt. Sauté the prawns for 3 minutes on each side and transfer to a separate plate.
Step 3
Meanwhile, cook the pasta in a large pot of boiling salted water. Drain, reserving 120 ml of the cooking liquid for the sauce.
Step 4
In a large bowl, mix the pasta with the pesto, adding 1 tablespoon of the reserved liquid at a time to moisten. Top with the prawns. Sprinkle with lemon zest and parsley.
