Description

- Olive Oil - 3 fl oz
- Minced garlic - 1 clove
- Chopped Sage Leaves - 2 tablespoons
- Red Long Chili Peppers - a pinch
- Salt - to taste
- Spaghetti - 9.9 oz
- Saffron - 8 pieces
- Marinated cherries - 7.1 oz
- Bottarga - 3.5 oz
Step by Step guide
Step 1
Sauté the tomatoes in a non-stick skillet covered without oil for 1 minute.
Step 2
Add a little olive oil and sauté covered for another minute.
Step 3
Remove the skillet from heat and let the tomatoes cool, then peel them.
Step 4
While the tomatoes are cooling, heat the olive oil in a shallow pot and add garlic, basil, saffron, and red pepper. Stir and add the tomatoes. Add salt and pepper.
Step 5
Add the cooked spaghetti to the tomatoes, quickly toss to distribute the sauce throughout the dish, and check for seasoning.
Step 6
Serve the spaghetti on large plates, drizzled with a few drops of olive oil and topped with thin slices of bottarga.
